Chocolate Zucchini Cake

Ingredients

1/4 cup butter

1/2 cup vegetable oil

1-3/4 cups sugar

2 eggs

1 tsp. vanilla

1/2 cup buttermilk

2-1/2 cups flour

1/4 cup cocoa powder

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. cloves

2 cups grated zucchini

1/4 cup chocolate chips

Directions

Cream together butter, oil, sugar,eggs,vanilla and buttermilk.

Sift dry ingredients and add to creamed mixture. Mix in zucchini and chocolate chips.

Bake in a greased and floured bundt pan or a 9 by 13 -inch greased pan at 325°F for 45 minutes. Delicious!

Notes

For Chocolate Ganache:
In a small saucepan heat 1/2 cup whipping creamer medium heat just until boiling. Remove from heat; add 3/4 cup semisweet chocolate chips(do not stir). Cover and let stand 5 minutes. Stir until smooth. Cool for 15 minutes before using.
